Clai is the iconic estate in Istria, famous internationally for distinctive wines made from local varieties in a ‘natural’ style. Its proximity to the Adriatic lends a saline mineral note to its wine, but it is far enough inland to benefit from the cool continental climate of the Alps. It was founded by Giorgio Clai, a successful restaurateur who inherited vines in the 1980s, and became more and more passionate about winemaking until he went full-time in 2001. The estate now comprises ten hectares of vines and five hectares of olive trees (producing fantastic oil!). Giorgio has been joined by consultant Dimitri Brečević, a half-French winemaker with his own estate, contributing international experience and elevating the estate into one of Croatia’s finest.
Since its foundation the vines have been farmed organically, and the wines made in a traditional, non-interventionist style with skin-contact, spontaneous fermentation and long maturation on the lees in large Slavonian oak casks. They are bottled unfined and unfiltered, allowing each vineyard’s terroir to shine. The soils are mainly well-drained limestone flysch, a complex structure of sand, sandstone and marl, whose low vigour challenges the old vines to give their best.
Although there is a small proportion of international grape varieties, the focus is on the local – Malvasia and Refosco (known locally as Refošk).
