We couldn’t believe the low ripeness level – just 83 Oechsle, which is absurd for botrytis-affected grapes.’ It is quite unique – all the density of a far more luscious wine, but none of the sweetness, clarity and purity, and a long fine juicy minerality that runs and runs.
