Harvested by hand, macerated on the skins for seven days and left after fermentation for a year on the lees in oak casks, this ‘Grüvi’ needs a little air to show its true character, revealing an elegant, complex spicy wine with brisk acidity and a long finish tinged with white pepper. It is unfined and unfiltered, and may throw a little sediment.
