He began harvesting on 12th September, reporting that he could have waited longer but was keen to preserve freshness. Indeed, he believes that the best vintages are those which do not achieve perfect phenolic ripeness, as a slight lack of maturity keeps the tension in the wines. He has been reducing sulphur levels steadily in recent years and will bottle the wines early.
