The Growers > Domaine Christophe Denizot

The Denizots were delighted with their reds this year: hot, but not too hot weather gave them an appealing richness. Christophe’s father Lucien remarked that he had not seen such perfect grapes since 1959. The drought became acute in August, and some vines shut down, preventing overripening and preserving acidity, vital to retaining freshness.
In Montagny, cool weather in April hit the earlier ripening Chardonnay buds, resulting in a dramatic loss of yield.

Like many growers, Christophe Denizot was careful to avoid overe-xtraction, allowing just over a week of cold maceration and then punching down the must no more than twice during fermentation.
