Hans-Peter Ziereisen of Weingut Ziereisen

You often hear winemakers described as maverick, but this guy really is. Tasting with him is completely exhausting and involves racing from one cellar to another, listening to a torrent of fascinating information and tasting around three wines a minute. And on the side he has an asparagus farm, personally delivering it to the restaurants in nearby Basel just across the border. But this restless passion produces wines of extraordinary character and purity, which are a revelation to the most seasoned Pinot Noir aficionado. His second great grape love is Chasselas, known locally as Gutedel. This may seem an unpromising candidate for affection, producing many a lacklustre bottle, but in his hands it becomes a magical conduit of terroir – from the easy-drinking basic wine to reassuringly expensive (over £100) which is often mistaken for grand cru Burgundy in blind tastings.

The chalk-rich Ziereisen vineyards are in the Southern tip of Germany. From them you can see three countries: Germany, Switzerland and across the Rhine, the old enemy France. The vineyards are meticulously farmed and harvested by hand. After a brief love affair with new oak, Hans-Peter has pulled back from it, favouring the traditional large old German barrels that can be more than a century old.
